Good morning everyone,  winter drawers on!

Our carrots are sprouting in storage.  What to do, what to do?

While not being an expert in this, I'd have thought that once they have started sprouting, they're only going to get less crisp.

If that's the case, then perhaps it's time to peel, chop, blanch and freeze?
I try to take one day at a time, but sometimes several days all attack me at once...
