[New shoot]

If you don't like coriander, I'd suggest you sub another herb as the salad needs it, but really nice summer side dish for any chinese style BBQ or pan fried meat or fish    Easily enough for 4.

450g bean shoots
2 fresh red or green chillies - chopped finely
3 tbsp rice vinegar or sub cider vinegar
2 tbsp light soy sauce
2 tbsp coriander leaf - finely chopped
2 tsps garlic - finely chopped

Put everything in a bowl and mix.  Marinate for 2-3 hours and turn over from time to time so all shoots well coated with marinade.  Drain before serving.

do you remove the chili seeds ? it sounds great

I did as they were pretty hot chillies, but you could leave them in and make it spicier 

Actually forgot to say on the first post, marinate in the fridge so the salad is well chilled when you eat it
