Kentish Apple Tart

A very old recipe, tried and tested and very quick, easy and delicious.

Grate 2 large cooking apples into basin, add 3oz sugar, 1 beaten egg, 2oz butter, rind and juice of lemon. Mix well. Pour into pastry case and bake about 1/2 hour in quick oven.

Hope you enjoy. I leave the apple mix loose in the pastry case ( if you know what I mean ) and let the top get lovely and crisp and golden.

Doesn't it need any flour? (Sorry if this is a stupid question)
Self-sufficient in rasberries and bindweed. Slug pellets can be handy.

No I have always simply cubed and stirred in, a bit like adding to flour for pastry.

I made this at the weekend whilst having a bake session. It was lovely, I just added cinnamon. It didn't last long and I have orders to make it again.

Just to say I made this again yesterday but stirred in 3 tablespoons of mincemeat I had left in a jar. Really lovely, went to bed  very early last night as I was feeling under the weather. When I surfaced this morning there is hardly any left - either we have mice or OH liked it a lot!! :lol:
