drying mushrooms
« on: October 28, 2012, 20:35 »
Id like to dry some mushrooms over the stove while its lit. I have a contraption made from black chain and dowling which I thread my apples on to can I adapt this for mushrooms, wire, string not sure where to start?

They will be used for a back packing YHA trip in March but I want to practice before hand.
Any thing else I could dry over the stove to save energy using the dehydrator.

Mushrooms can easily be dried on the string over the stove. Most folk dry them fresh sliced and raw, but I've found that they're more tender and less rubbery if you first give them a 30 second blanch in some boiling water and then dry them.

You can do apples but because it's a longer drying time, first rinse them in a weak water and lemon juice mix so they don't brown too much. Same with pears, peaches. Cherries don't need the lemon juice blanch but do pit and halve them.

My grandmother did hers over a wood cookstove and used a needle and thread method. If you can find a large needle that's use for upholstery work, that's ideal as it's large enough to both handle and thread the foods. Otherwise, use what you have.
