calculating egg sizes for cooking

I have always heard cake baking people around me say that pullet eggs are too small to be right in a recipe and are only good in an omelette or scrambled. Perhaps if you have a read of this it might give you some pointers, especially if you weigh or measure the amount of liquid content in your pullet eggs as a comparison.
