calculating egg sizes for cooking

Among our chickens we have two younger hens who are still laying fairly small eggs. Does anyone know how how calculate how many pullets eggs equal a standard sized egg for making, say, fatless sponges?

I have always heard cake baking people around me say that pullet eggs are too small to be right in a recipe and are only good in an omelette or scrambled. Perhaps if you have a read of this it might give you some pointers, especially if you weigh or measure the amount of liquid content in your pullet eggs as a comparison. :)

Thank you both - very helpful. I'll measure the beaten eggs in tablespoons (and if all fails, the result can sit at the bottom of a trifle!!) ::)
