Good recipe for grouse
« on: September 03, 2015, 11:41 »
Anyone have a good recipe for grouse, whether roasted with, stuffed with, or using left-over meat?
I work very hard so don't expect me to think as well.

I think I'm probaby a bit too late, but hey,

Have you tried BBQ?

I now only ever BBQ Quail, split in half along the backbone/breastbone, rubbed with salt & pepper, hot BBQ, skin side up for 4-5 mins then skin side down for 3-4 mins, absolutely sensational.

Perhaps Spatchcock & marinate the Grouse for a few hours, I would try red wine, thyme, olive oil, maybe something sweet like a little maple syrup, season well, of course.

I suspect you could only do this with young birds.

mmm.......I might have to try this myself at the weekend

How about a winning smile, a large helping of patience and separate rooms?

Nothing new then!  We can't do a spathcock because my OH has already separated the carcass, so what we are going to do is marinate some prunes in brandy, then make a sauce with them and add some mushrooms.

How did your Grouse turn out when you did it on the BBQ?

I haven't had a chance to do it this weekend but want to try it sometime, shame because it's like the first days of summer here!
