Sweet Chillie Sauce

20gms/8oz fresh red chillies
750gms/1.1/2lbs sugar
750ml/1.1/4pint white vinegar
350gms/12oz sultanas
3 garlic cloves crushed
1 tbsp salt
1 tbsp finely grated fresh ginger.

Wearing gloves, split chillies lengthways and discard seeds (unless you want it v.v.hot).  Chop the chillies roughly and grind them in blender with enough vinegar to facilitate blending.
Put all the ingredients into a large enamel or S.S pan and bring to boil.
Simmer gently until the sultanas are very soft.  Cool, then puree in a blender, food processor or rub through a sieve.  Pour into sterilised bottles and seal  (I use my empty vinegar bottles)  Mrs Bouquet :lol:

I'll try this one MrsB when I get some chillies!!!!!

My favourite at the moment is biscombe's Thai sweet chilli sauce.

why don't you send your recipes in to John for adding to the recipe section??

yum that sounds good! Could I make that with cayenne do you think?

If I cant I have got other chillies on the go, but no sign of flowers yet :-(

I did type them on recipes last night, but then I couldn't find them, so I asked the moderator, who replied back, but I still think I did it wrong.

FANTASTIC  :D  my bloke loves sweet chillie dipping sauce, he puts it on everything! I'm gonna make some and jar it up with his name on it...mmmm can I wait for my chillies to grow   :|  nope so will have to go to farm shop this weekend  :oops:

I put last years in a big paper carrier bag....give them a turn every few days and they'll dry just fine. I'm still using mine from last year and no casualties! :)
