Title: Anyone know about home made wine? We have a problem...

Last year our plum tree had about 2 plums  >:(. The year before it had about 2 million  :D and in glee we made pies, jam, plum and chili jelly (truly awesome), and, you've guessed it, plum wine.

Or rather we started plum wine, put it into the litrejohn with the blooper on the top and left it in the workshop. This is in September 2007.

We found it yesterday. It is an attractive gold colour and still goes Bloop occasionally, so something's happening in there. But will it be drinkable? Will it be petrol? Will it be brandy?  :tongue2:

Any advice or suggestions welcomed. For now I daren't open it!!

Has it cleared?  If not try a campden tablet to stop any further fermentation and see if it clears.

If it has cleared, the best thing to do would be to taste a drop.  You will quickly know if it is OK or not!  :D

If its still going 'bloop' it is still fermenting. Just leave it a bit longer. Is it clearing? You could always try racking it.

Hi, it would help to know how much sugar you used per gallon, if you followed a recipe it may be that it is finishing working taste it and see if it's dry that means it's used all the sugar and will clear.

Try taking this over to the main gardening section, or google "biennial bearing" - there are several things you can do to help discourage this from happening.

For the wine, try it and see!  You may have a secondary fermentation of some kind going, or it could just be a very slow main ferment (was it in a cool room?).  You can put in a chemical that'll stop fermentation (campden tablets aren't terribly effective, but I can't remember what teh proper stuff is called), and bottle it to mature if it tastes OK-but-rough.

It was a lovely clear gold, so we swallowed hard and tried it.

Glad it was good - I experimented with plum wines a few years back when there was a good crop available, and some of the results were gorgeous (I personally liked a few sultanas added to the mix best).
