Has anyone got a recipe to dry cure bacon? Without nitrates please

Some folks insist nitrates/nitrites are absolutely essential but I know many people who've safely made tasty bacon without them. They're mostly for the pretty pink colour of meat.

I cannot vouch for this recipe as I have not yet got round to curing my own bacon but this is fromDick and James Sawbridge curing and smoking book and is for 13 lb of pork, so you would have to adjust quantities.
600g salt
200g sugar
10 star anise
10 bay leaves
3 tabs
black peppercorns
3 tabs coriander seeds
6 dried chillies
Also Paul Peacock does a book called The Smoking and Curing Book, with all aspects of curing and smoking but his recipe does use a basic bought cure with saltpetre as a starting point.
