apple cake recipe
« on: October 29, 2009, 15:04 »
You can tell it's not gardening weather 'cos I've started baking ::)
I have just made this apple cake and it's gorgeous..though still a little warm. I suppose it may be better with some custard tomorrow...we'll see :)
Torta con le mele .....cake with apples to you and me, but my Italian friend Titta gave me the recipe :D

4oz  butter, softened
8oz S/R flour ( I used marge but don't tell Titta!)
3 eggs
2 large cookin apples, peeled cored and chopped (not too fine, apple lumps are good!)
5oz sugar
1 1/2 teaspn cinnamon

Gas 4 - 5 (my oven seems to cook hot so I used gas 4 )

line loaf tin with baking paper.

Bung all ingedients, except apples, into bowl and mix well with electric mixer.
Needs to be a stiff dropping consistency as the apples release moisture as they cook, if too stiff, add a little milk.
Stir apple pieces into cake mix, and then spoon into the tin.
Level top and bake for about an hour. Pierce with a skewer to check if cooked, i gave mine another 10 mins.

That sounds lovely MoS!  :) I'm not much of a baker, prefer my savoury cooking but that sounds easy and tempting, so I might give the recipe a go.

Thanks for sharing,

Lorna  :).

4 = 180 degrees
5 = 190 degrees

....and would there be a reduction in temp. to account for fan oven? There isn't always..

I'm not sure as I haven't got a fan oven! At a guess, I'd go for the lower temperature - 180 degrees.

Thanks Val  :D.

My Mum used to make a lovely apple cake, I think it was called Canadian Apple Cake. It was made in a flat tray with almost a shortcake type of base then there was sliced apple, cheese in there somewhere, brown sugar and the obligatory cinnamon on top (we haven't really got a slurp/Yum! emoticon, have we :D?). I was knee high to a grasshopper when this was a regular fixture so I have no idea of the recipe and don't know if anyone in the family has it still (helpful eh?  ::)).

Lorna.  :)

Argyllie, you have to try to find the recipe.....cheese and apple .....  ummmm
 And yes try the lower temp..mine's a fan oven thats why i went for the lower temp, but like I say try it with the skewer, before you take it out. I wouldn't want you to have a soggy bottom now, would I ?  :lol: :lol:

Hi MoS,

I will see what I can find out re. that other recipe (cheese in the base I think so it could be a scone type?) and I'll try yours making sure I don't get a soggy bottom along the way  :blink: :lol:

I have made a similar cake but using chopped rhubarb and it is still delish and a way of getting unwilling rhubarb eaters to consume huge amounts :lol:

A joint effort with me sitting at the kitchen table and telling John to pass things! The cake is is now in the oven and I'll give my verdict in about an hour! Must stop using my fingers to scrape up the bowl and eat it like a kid ::) ::) ::).

A little bit off topic I know but Val has just reminded me that when my mum had made a cake and we could 'lick out the bowl' one of us had to divide it in half and then the other one had first choice of which half they had. Also worked with anything that had to be divided between us. You then made sure you divided it in half. :D
