we did lagsagne the other night using thin slices of quitr a big courgette instead of the sheets of lagsangne and it was very tasty , salt and pepper and cheese each layer then put the meat sauce on each layer as you would cheese on top realy tasty .

We don't have quite 6 million but a fair few which brought me to this website today looking for recipes.  I have made courgette and chocolate cake today and also courgette and potato soup - both yummy !!

Chocolate Courgette Cake is weird though yo uhave to admit that?  :wub:  It went down well at a family bbq in our yesterday (when the weather was sunny  8) ).

I discovered one of my yellow courgette plants, not satisfied with the usual population explosion while I am away for two days, has gone and had Siamese twins!!

Two courgettes laying side by side and joined all the way along their side!

Not a 4x4 but a 2x2!!  :lol:

very good  :nowink:  So, is the 2x2 courgette phenomena common?  Sounds like some form of Mitosis process gone wrong...there must be a statistical chance of that happening, but i have never seen it...
p.s. turbo-charged courgette plants still producing at high rate and volume!

I tried a Sophie Grigson recipe the other night - I have NEVER been able to make successful courgette fritters - all that annoying grating to find they just will NOT stick together!

You need:

Flour, cayenne pepper, cinnamon, salt mixed together
Egg - whisked
Fine breadcrumbs
Courgette - quartered lenghtways if small, or sliced if bigger - whatever

Coat in flour, dip in egg, roll in breadcrumbs - fry in oil

Serve drizzled with fresh lemon juice and a big blob of mayo - delish!  :) Oh Sophie's recipe had parmesan in the breadcrumb mix too but I omitted that.  You can find the recipe proper if you google it.

I cooked the Courgette Fritters tonight - lovely jubbly!  They went really well with a Chicken Balti curry  :)

And here it is / they are..... twin courgettes  ;)  Just as well they don't all grow in pairs or we would be over run!

Anyone else had anything like this?
