I got some free plug trays at the nursery a while back, the little diddy ones that they sell seedlings in, and as I am short on space sowed a few seeds in them. 

I started my beetroot off in them, and now they are sprouting I'm worried I may have made a mistake, as they are root developing plants aren't they?  Would it hinder them in there?

When they are all shooting through I intended to pot them up... should I do it now instead?

I grow my beetroot in seed trays, prick them out 3 to a 3" pot, and then plant out. Not had a problem with them (though was anxious first time I did it being as they are "roots")

We pull 2-of-the-3 for early thinnings, leaving one to mature longer / bigger. Used to do one-per-pot but aft era while decided I didn't need so many plants / space if I could use thinnings

Depending on your seed you may well get more than one "plant" per seed, so beware of that. If it happens probably best to thin each seed to one seedling, and then put three seeds' seedlings per 3" pot (or fewer if you want more large-root plants and fewer thinnings)
