I’ve not got my mazlin pan or thermometer out of the cupboard for a few years now as I find it so easy to make jam a couple of jars at a time as I pick the fruit.
This method is ideal for berry fruit, and I love raspberry jam, gooseberry jam and red currant jelly.
Ingredients500g Berry Fruit - prepared and washed
500g Jam Sugar
150 ml water
Method1. Put the fruit and water into a large bowl without a lid, and microwave on 600W (medium) for 5 mins.
2. Check fruit is cooked an add the warmed sugar. (I pop the sugar in the oven at about 100C while I sort everything else out).
3. Add the sugar to the fruit and stir to start it dissolving.
4. Microwave on 900W (high) for 10 mins.
5. Stir an microwave for another 5 mins on 900W (high).
6. Test for setting. If it’s still a bit runny microwave on 900W (high) for another 5 mins.
7. Pot in sterile jars in the usual way.
