Rather than pickling beetroots or keeping them sand (where they quickly shrivel), I would like some tips on how to prepare them for the freezer please.

use the freezing tips on this website - par boil/blanch - cool rapidly - deskin - dice and slice - freeze - it worked for me!!

I am trying to also store as per spud, in a cool place in a bag - see what happens............

Thanks for the reply. Are there any freezing tips for potatoes, by the way, as we don't really have the proper facilities for storing them cool, away from the light, etc?

this is the article - includes beetroot - and potatoes - not tried spuds - yesterday surplus was turned into mash and frozen!!
