Green Onion (overwintered onions) Uses

Hiya

I have some overwintered Senshu onions some of which are starting to bolt.  Any ideas on how best to use them up - e.g. would  they make good onion marmalade - do you just use them as normal onions?

You can just use them as normal onions, they are sometimes a bit more watery - that's the only difference  :)

I suppose that is why they always seem so juicy  :D

I just take them up as I need to use them, as I find they don't store like the Summer ones tbh
