cake problem

I used to make a lovely 'all in one' cake with Greek lemon yogurt.
As I can't find the lemon yogurt over here I thought I would try the same recipe but with plain greek-style yogurt and lemon juice.

Sounds reasonable to me, but it turned out like a brick :(

Wrong yogurt do you think or does the lemon juice split the mix or something?
Anyone got any ideas on what went wrong or another lemon sponge recipe to try?
I really really fancied a lemon cake...sniff sniff

Is that the one with lemon syrup poured over?  cos i find that too too sickly :(

The lemon yogurt one was always light and fluffy..........in greece :nowink:
Obviously the recipe didn't travel well  :lol:

Dont think it should be sticky, should be light spongy with the top   a bit crunchy.

That almost rhymes :D

I can see lemon curd yogurt and zesty lemon yogurt at all the major supermarkets. I expect theres far more in them than just lemon and yogurt though.

I googled a few recipes and they seem to use natural yogurt and then lemon zest - worth a try?

I would just try finely grated lemon zest inside of juice.  Too much lemon juice probably makes it too acidic  :unsure:

Lemon drizzle cake if you make that is lovely, its just sponge cake, holes made with a skewer and lemon juice trickled over.  Well thats how we did it at school many moons ago anyway.  Don't remember adding sugar to the lemon like most of the recipies suggest.

There is this one here for Greek lemon cake that just uses Natural yoghurt and lemon juice, as Lardman says.

That last recipe is not much different to mine......except SIX eggs :ohmy:

I'll have to try just drizzling the lemon juice over instead of adding it to the mix.......................thanks for the suggestions :)

Yeah try it I'm convinced I never added sugar to my lemon juice when I made it and I also convinced the ex MIL never added sugar as well.  Wasn't sticky, maybe cos of the absence of sugar to the lemon juice.  The only other thing is we did always use the squirty lemons not real ones so don't don't know if they are slightly sweeter.
