I needs some advice and recipe suggestions please ...  

I have had lots of fun this year growing a whole variety of beans to dry ... lazy housewife, madiera maroon, coco bi-colour, borlotti to name a few ...

Which beans do folks use and for what purpose?

How do they vary in taste, texture and cooking times?

What other bean would you really recommend??

I know only two of these, Flower. The Lazy hw, so called ,'cos it cooks much faster than most, and as you suggest they can vary greatly in cooking time.
My pet hate is these mixed bag of beans sold, sure way to toxication.

The barlotti beans take longer to cook and I don't find them too flavourful dried, works better cooked with meat, like a casserole.

I like to do a pork leg or shank(bone skin and all, even better if smoked), gently cooked with a load of beans and flavour with bay and paprika, serve or finish with soured cream.
