Unripe gooseberries

Unripe gooseberries

I read that you should take off some unripe gooseberries in late May and they can be used for cooking.  Any good recipes on how to do this ?

I'd stew them with plenty of sugar and make a gooseberry crumble or gooseberry fool. Yum!

Think I would only do this if there were so many goosegogs that nice large fruit would not be able to delvelop!
