This curry is much tastier than the sum of it's parts and is shockingly cheap to make a lot of.  It got me through most of university, but people always compliment me on it even now, (although it's my fiancee's recipe, Hehe):

Lentil & Bean Dhal

225g Red Lentils
1 Large Onion
1 Sweet Apple (I use pink ladies)
7-8 cm Length of Cucumber
1 Tin Baked Beans
Curry Powder
Bay leaf
Clove of garlic
Lemon Juice
Salt & Pepper
2 TbSp Oil or Ghee

Cover the lentils with water, add the bay leaf and the seasoning and boil for about 6-7 mins (until water has been absorbed). In a wok or large saucepan, heat the oil or ghee and add the minced garlic, diced onion and the cored & chopped apple.
     Fry gently until onions are soft then add curry power (1TbSp for a mild curry, 2 For a hotter one). Stir briefly and add chopped cucumber. Fry for another minute then add the baked beans and the lentils. Simmer together for at least ten mins so all the flavours can mix, add a good splash of lemon juice and remove the bay leaf. Enjoy!

Thanks Riktor, I've just bought a huge bag of lentils so I need all the lentil recipes I can get, this one sounds really interesting.

Made this aubergine curry last night.  Quick and easy.

Enough for two =

1 aubergine chopped into small squares
2 potatoes  cut into walnut size
1 medium onion chopped small
1tbs curry paste (I use Ferns medium hot)
2 cloves garlic smashed
200 ml coconut milk or I sometimes use pure creamed
water


Gently fry chopped onion in 2 tb olive oil until soft add garlic and fry
1 mins.  Add curry paste and cook gently about 4 mins stirring so
it doesn't stick.  Add potatoes, (partially steamed first as I find otherwise#
they take forever to cook) add aubergine and make sure everything is
well coated with the paste. Fry for a further couple of minutes then add
enough water to prevent sticking and then coconut milk.  Salt to taste.
Cook further 20 minutes until augberine is cooked through.

If you like a really hot curry add chilli or if you've grown them a birdseye
fresh one would make it really fiery.

Serve with rice or Indian bread (e.g. Naan) and poppadums.  Homemade
mango chutney is delish as an accompaniement and all the other side
dishes that make it a feast.  Bon appetit!

Cheesey Vegetable Pasta Bake - YUM

This recipe uses up left-over veggies from the Sunday meal.

You will need -  a quantity of cooked, chopped vegetables (the choice is yours), some cooked pasta shapes and a quantity of home-made cheese sauce.  Just mix the lot together and pour into an ovenproof dish, sprinkle a mixture of grated cheese, herbs and breadcrumbs over the top.  Pop into a moderately hot oven for aprox 30-40 mins until piping hot and crispy on the top.  Delicious served with crusty garlic bread - ENJOY:)

Alternatives for the veggies who eat fish is to add some large prawns or smoked fish pieces to the mixture.
