Apple and cinnamon jelly...
« on: July 09, 2010, 09:05 »
Is gorgeous!

Maybe not to spread on bread, but as a topping for porridge or creamed rice :D

(aren't I getting adventurous for my one week of jam making experience lol)

Like the sound of that - what type of apples did you use?

I like the sound of that too - how much cinnamon did you put into what quantity of apples.  Mouth is watering already.

I used granny smiths (can't get bramleys here for love nor money :( ).  1 two inch stick of cinnamon to 1kg of apples.

I used preserving sugar (with added pectin and citric acid), though i still had to boil for 20 mins before getting a set.

Resulting jelly is a very pale golden colour... not 100% clear, but that is due to my imperfect skimming.

I'll take a pic tonight :)

I made a batch of that last year, and I added whole cinnamon stick to the hot jelly - looks well good in the pot - Didn't think of using it with cold cuts though, brilliant!!!!!!!!! :D

You've just reminded me that I used to make pear and ginger jam, needs lemon juice to set though.

You're right Casey, can't get Bramley apples here either - what is it with the  French and their apples ? Try explaining the joy of a baked bramley - I guess " an apple that is too sour to eat alone and that turns to mush when cooked" wouldn't have me running for the orchard, either -  ahh you have to be in the know, don't you? We live in an area which grows apples and even here they are not good - no hope at all! Still,   can't have everything!

I remembered reading this earlier in the year, I had a bowl full of apple peelings and cores from making blackberry and apple pies and thought what a waste to throw them out for the birds. So I added a pint  and a half of water, a stick of cinnamon and a drop of juice which was left in the bowl the blackberries were in. Boiled and strained I had a pint of juice so added a pound of sugar and it has made a lovely delicate jelly which I think will be nice on toast. So thank you Casey :)

I will be trying the juicer out on some James Grieve apples tomorrow and the pulp will be converted to apple and cinnamon jelly, the William pears i picked today will go into pear, hazlenut and chocolate cake and a few jars of pear and ginger jelly.
Thanks for the inspiration. :)
