Have just pickled a load of onions and shallots, some straight pickling vinegar, some with pickling spice and some with a bit of chilli etc to hot it up.  read Delia Smith and she said you needed to eat them after a couple of months but before 3 months?  is this correct ? do they go off?  She said they may last longer if salted overnight before pickling and i have done some this way too.  What are your experiences?  I was hoping to keep some for Christmas to give as presents (not just on their own).

picled onions are great after even 45 yrs as found out in the finding of army supplies in a bunker in france ,,, im still eating last years and they are blooming luverly ... just keep em covered with vinegar is all i does ,,,, :wink:

Thanks Munty, i thought it strange as vinegar should keep em preserved for ages.

They just tend to get softer the older they are, mine from last year are still fine though.  Have enough left to probably not bother this year.  Must do more beetroot though.  Having a go at gherkins this year.

Thanks Wighty, yes i am having a go at beetroot (for her indoors as i don't like em) and gherkins too.  I tried some of my spicy pickled onions after 2 weeks as could not wait and they were stupendous!   8)  just lifted all my Shallots today and 1 variety quite small so will pickle all of those.

Is it ok to use "normal" onions when pickling?  I have some small ones in the ground that would be ideal for pickling, also are red onions ok to pickle as well?

I've even pickled sliced onions before now!  

And I certainly wouldn't wait for a couple of months to start eating my pickled onions!!!!  But they do go a bit soft as they get older, but don't go 'off'

most of us (family) like our pickled onions crunchy so for a couple of years they go great with cheese ham ect but after a couple of years they will go slightly soft so a trick I learned from Mum is keep the softer omions for winter stews sliced and dropped in they give a nice tang and great smell and you don't waste your crunchy onions.

Oh that's a good tip, thanks for that! I love making stews and am glad of an idea for some variety  :D
