There are few recipes for these around

This is how we do it

They go well with barbie food, or great on their own

Serves 4 (or if Muddi & her hero are around then double the recipe)

4 large red bell peppers, with stalks on if poss
Jar of anchovies, use the ones in olive oil, as you can use the oil
8 large toms
Basil
Fresh garlic, chopped, loads of
Balsamic vinegar
Salt & peppper

Cut peppers in half, cutting down through the stalk, not across the middle
De-seed
Skin & de-seed toms, leave seeds in if you want
Put half a tom or more in each half of pepper, ie fill the cavity
scatter in garlic
Add a couple of anchovies in each
Add a couple of basil leaves in each
Salt & pepper
Pour olive oil & vinegar over the toms and the inside of the pepper
Put in a oven proof dish
40 mins at 180 ish
Eat hot or cold
Mop up juices with bread, best bit

okay alex got the message- but everyone should try this recipe as it is the best thing ever-  there is so much flavour in these peppers you won't want to eat it with anything else cause everything else tastes cardboard  after this delight.
