Using beans that have "gone to seed'.

I have dwarf French beans and Runner beans that have 'gone to seed'( we were away for last week of Aug and most of September - I have a conflict between travelling and gardening and the travelling won this year).
Can I just take them out of the pods and use them the same a dried beans in chilis, stews ,casseroles etc?
Taken over neglected veg garden at new home. Enemy number 1 Ground Elder. Then there is the furry terror - bunnies - to contend with!
Made a start have beds established but moved in too late for serious planting. We shall see what 2015 brings.
