Lifting carrots now

Morning all  :D

I am thinking about lifting my carrots soon and storing them in a box with sand. On the "Storing the surplus" page, it says "The ideal temperature for your root crops is between 0 and 4 degrees C". It's not going to be that for a while (hopefully) so will it mean they are likely to be useable for much less time if stored now, or does it make that much difference?

I could leave them in a month or two longer, but then there is always the risk of scallies making off with them.
