I always make mine the night before I have pancakes and they turn out pretty well  :D

My grandson likes small amarican type ones so we will be having those ones and on wedensday as hes off to other grandma .

I only leave mine to sit for an hour and it seems to work just fine. Not so many to make today for just the two of us but will be having a "re-run" with our youngest gd on Thursday so she can make some too.

I make the batter and bung it in the pan.

We had mango and raisin American style pancakes. The recipe said use ricotta and milk. Didn't have ricotta so used the remains of a pot of mascarpone.

Granddaughter yummed them down.

I wonder how many forgot to buy their pancake mix during their weekly shop?

So easy to make and if you run out make some more. Between us at tea time we got through 12 eggs , 4 in the batter and the rest scrambled  ,fried and poached .  Our birds are earning their pellets!!
