Spinach Beet ( When to pick)

Hi All
   I have some spinach beet which is doing really well most of the leaves are 6" to 8" long, i was wondering when i can start picking it. I understand that when i pick it, so long as i leave the root in the ground and just cut what i want it will carry on growing. Is this correct and can i pick some or should i leave it for awhile

you can start when the leave are an inch or so for salads... 6-8" is nice, probably most of the stems can go in the pot too...for bigger ones I hold the stem in one hand and pull along the stem with my other hand, stripping off anything that comes off easily..

even the raw stems are quite nice, a bit like eating celery
