Cooking duck eggs.
« on: July 22, 2010, 09:50 »
Jasmine my crested saxony layed her first egg for me this morning :) Question is how do i cook it? I've had duck eggs before but never cooked them myself. I know they need cooking longer than a hens egg, Does that mean I cant have it with a runny yolk?

I too have a runny boiled duck egg, just give it a minute longer than a chook egg. I do prefer them poached and with a slightly runny yolk though yum yum  :)

Great news that she has started laying  :D

I only picked her up yesterday Cara, So she was laying anyway really. I went to get a Cayuga, but they only had drakes left  :( But Jasmine is lovely anyway.
I hear you have talked Andrew into ducks  :D Well done, Im sure he wont regret it
Hows your drake today? (sorry forgot its its bumble or bee, I think its Bee that poorly?)

The vet thinks Bee is a bit run down from his moult and they had all just been wormed so that has tired him too.

Mainly though it is down to me trying to break him from being over attached to me - he is imprinted and me stopping all attention and batting him away from me has confused the little man!

I feel really guilty as I didn't realise quite how strong a bond it can be and this is common behaviour if they lose their mate and it can really stress the bird out  I've given him lots of cuddles and let him nibble at my ankles this afternoon and already he is not fluffing as much.

It does explain why I noticed the fluffing but Phil said he seemed fine to him - Bee doesn't care if Phil picks him up for fuss so just carries on as normal with the other ducks, only when he sees me and can't get to me does he fluff up and hunch down. I'm going to get some material on imprinting and also be careful not to totally hand raise and fuss in the future!

duck eggs are supposed to make the best cakes ever -

I love duck eggs for sponge cakes.  They have more fat than hens eggs and make a lovely moist but light cake thats usually nice and yellow because of the big yolk. :)
I've also made good ice cream with them. :)
