I lovr to make onion tart, on a flaky pastry base. I cheat and buy a low fat one.  I use a nigel slater recipe.  Just a salad on the side

The low fat base is to mitigate the effects of the butter used to caramelise the onions  :lol:

I do a sort of cheats tart tatin

caremalise some onions, put to one side
halve some cherry toms (more colours the better) fry on cut side till browning and put to one side
Take a few 'circular' slices of sweet pepper then chop the rest and fry off with mushrooms, any veg lurking in the fridge, herbs, garlic etc

Make a little pastry...bog standard half fat to flour and a drop of water. I add a little mustard powder to the flour and a tablespoon of powdery parmesan. I also chuck in an egg yolk if my hens are laying well.

Arrange your veggies in a pie dish, starting with the circular slices of pepper, then the halved cherry toms (cut side down) then the mixed veg and lastly the layer of onions.
Roll out the pastry and use it to cover the pie...tucking the edges down the sides like a blanket.

you can store in the fridge for a day or two before cooking....the pastry won't go soggy because it's on the top.

cook in a moderate oven for half an hour or so until the pastry looks done, go round the edges with a knife and then invert onto a plate.
The peppers and toms look so very pretty!

Although it took a long time to type and probably to read....this is a super fast yet dead impressive dish that I cook all the time.

Went round to a very carniverous friend's for lunch today and she did a very simple but delicious potato bake. Diced and boiled potatoes went into a casserole with a diced onion and garlic and lots of sunflower spread. Into the oven while she sauteed off some mushrooms in more spread. Spread them over the potatoes, crimbled feta and grated cheddar style cheese over the top, back in to melt and meld while she made a bowl of salad. Very simple and really tasty. I don't normally like mushrooms. Could use some diced squash too.

I do a veggie cobbler often, a mix of veg fried for a bit with a tin of toms and kidney/borlotti/haricot type beans mixed in then topped with be-ro cheese scone mixture and baked.  Makes a change from spuds/pasta/rice.  Very tasty. :)

Indian would be good not cooked it for a long time.

I often don't do the whole shooting match...am pretty much into mix and max these days, an theseare real easy to make.


8 oz. chick pea flour (gram flour)
1 teaspoon garlic, chopped
½ teaspoon turmeric powder (optional)c
A couple of teaspoons of your favourite curry paste
About ½ a pound of red onion, chopped roughly
1½ tablespoons fresh coriander, chopped (Optional)
juice of ½ lemon
salt, to taste
water as required.

Just mix that lot together until it's a thick batter, heat up enough oil to deep-fry in, spoon in the mixture about 3 at a time, fry for 30-40 seconds until golden brown, turn to fry the top and Roberta's yer aunty! Sounds a bit of a phaph...bit it's really not and the results are delicious every time! 

Mint raita is a good dressing for any hot (chilli) dish.

Grate ½ a cucumber and chop a handful of fresh mint leaves mix with a good, plain yoghurt, pinch of salt and away you go!

Thank you this was tasty I used Delia's cheese scone recipe and frozen toms with basil, broccoli, mushrooms,onion, garlic, squash and fat babies.
