Have a look at some of the old competition pages on here, I won  a cook book for printing up some of the veggie recipies that I cook time and time again.

Made pancake stack with mushrooms alternated with spinach and cheese sauce with grated cheese on top.

Talking about pizzas, if you like thin crust ones, have you tried making one with a warburtons square wrap?  They are very popular with WW members.  The wrap is lower in calories than dough bases, I mix a little hot chilli sauce with tomato puree, then top with whatever.......

Then just 10 minutes in the oven.

Brian really likes them and now so does my daughter and family.   :)

Well done Ann I will do the others too over the next few weeks. I usually make a wholemeal dough with rosemary or similar.

I make a roast butternut squash with cheese & walnut filling that is very yummy. It's a Hugh fearnly wot sit recipe.
Halve the butternut,scoop out seeds, put in blob of butter with crushed garlic,season & roast till soft. Scoop out middle leaving a shell. Mash flesh with more salt & pepper,then crumble in cheese & walnuts,original calls for blue cheese but I don't like it so use Stilton with apricots. Pile it back in to shell,sprinkle with more cheese & nuts then drizzle with scant spoon of honey & rebake.

l knew l had saved the small butternuts for a good reason. l'll give that a go this weekend, though l will roast some onion to mix in....can't do without onion. :D

Hadn't thought about adding onion, there were variations in the article, one with pine nuts. Let me know how the onions go :)

Did this for  c------s dinner a couple of years ago very tasty

Yes, that does sound scrummy snowy, we usually put stuffing in the middle and grate cheese on top  :)

I only make it occasionally & when I do I think why don't I have this more often. Ooh just re read my post it should have fresh thyme added to mash.

I made spicy vegetarian chili a few days ago. Had enough left over to freeze too! It was yummy :)
