non spitting quince cheese

I know i'm beginning to get a little obsessive about quince, but this is the first year i've had enough to experiment with,  i've just discovered that if you cook quince cheese in a non stick frying pan it doesn't spit, and you don't have to stand over it quite as much. So no more long sleeves, face protection or gloves. Don't know how to do smilies-but i'm happy.
