hi again all
Well today we have been making plum jam and plum chuntey.
I`ve heard that you must leave chuntey to mature but anybody now how long??
Sanity is just a playground for the un-imaginative

Only once the last tree has died, the last river poisoned and the last fish eaten will we realise that you cant eat money

A month is the suggested time for most recipes.  It seems to mellow down the vinegar a little.  You can eat earlier if you can't wait.

Real lime pickle, on the other hand, keeps improving for 10 or 20 years.

i like mixed  green tomato chutney after 6 mths with sultanas in  :wink:

I found 3 jars of old tomato chutney at the back of the cupboard the other dat it looked old and a little sad so i blitzed the lot brought it all to the biol and added some more vinager and its madr fantastic fruity brown sauce , got 2 large bottles and almost finished one now .
also add chutney to the last stages of a curry it makes it a bit richer .
