Equiptment: One of these, or similar...

Ingredients:
3 cups of blackcurrants
2 Cups of preserving sugar
3tbl spoons lemon juice

Method:
Chuck currants, sugar and lemon juice in the pan.
Put in Breadmaker
Press No. 7
wait.

Sterlize jars and pour

I got a machine that will do jam and was laid in bed planning my jam making session last night  :lol:   I did have redcurrants but put my bonfire too close to em so that's them done  :oops:   So, got blackcurrants aplenty, well last time I looked, so ta for the recipe

No probs, this recipe was the third attempt, the other two were a little runny, but still very nice. Having done a little research I discorverd you should use some fruit a little under ripe as there is more pectin than those that are fully ripe.

The original recipe in the book had 3 cups fruit to 1 cup sugar, when you look at other jam recipes the sugar to fruit is generally quite high, so I increased by half cup at a time until just the right consistency.

I think we're just accustomed to thick set jam here but I bought some French conserve the other week and that's dead runny. Lovely stuff  :D Won't be buying any more as I'm getting fruit on my allotment now. Wahay  :D

I know  :oops:   Even better on scones  :D   I make lots of scones now I got the hens hence eating more jam  :D   Next I'm going to have a go at making butter  :D
