We planted 2 courgettes in our back garden plot and they've gone mad.  Yesterday I had 10 courgettes and there's another 6 almost ready.

We love courgettes fried in olive oil with lots of cracked black pepper, we've had courgette and feta main courses, BBQs, the whole lot and still they keep coming.  Even our neighbours seem fed up of them!

In all seriousness, it's great although we are getting fed up with so much - yet we know when they stop producing we'll be sad.

And the taste is nothng like shop bought monstrosities!

We're having the same 'feast' stage with our runners - we're getting around 1 lb per day from 8 plants.  We've had runner bean curries, we're going to make chutney - and we still ahven't finished all our runners from last year!

Does anyone out there have any off the wall recipes involving courgettes?

I was going to say 'mine have got the wind' but that's not right,  the wind has got mine and devastated them, so no beans here . They've all shrivelled up and died.  Going to put them in the garden next year which is more sheltered and not up the lottie.  This is the second year hubby has had an 'erection' on the the lottie and we've got nothing.

Have you tried sauteing them then freezing? I then use in the winter to make a delicious pasta sauce with the cougettes, walnuts, cream and parmesan cheese...to die for!

Don't get me wrong - it's great that nature can provide so much with so little.....and we have plenty of folks we can give excess veggies to (and this is part of the joy in doing this in the first place).

how long do you sautee the courgeete for before putting them into the freezer?

Hi Judas you saute until only just cooked then they are ready when you want to use from the freezer, but don`t forget when preparing for the freezer to slice, sprinkle with salt and leave to drain for ½hr before frying. This gets rid of the liquid from the courgettes and takes up less oil when frying.

Hi. washsaint and others,  Apart from your several  ways with courgettes, we make lots of soup, the favourite is courgette and dolcelatte or gorgonzola, by doing this the soup freezes well and you can enjoy it throughout the year.  This year we have a selection of green, yellow and round courgettes with which you can ring the changes with colour in the soup.  Hope you enjoy this suggestion.   Buckie.

you can grate them and make fritters (like potato latkes); julienned in salad or stirfry. My favourite is just chopped and steamed with rice and salt and butter, but I like simple flavours...

We just baked the cake recipe and it was absolutely gorgeous!  The courgettes have kept the cake really moist and even the kids love it (they won't normally eat courgettes).

courgette omelete
courgette sandals

with the courgette pakora you can add whatever seasonal veg are to hand such as spud, carrot, onion, cauli etc. It all gets grated up
 :D

very quick and great meal;
slice the courgettes with a potato peeler so you have loads of 1-2mm thick ribbons, cook for a minute or 2 in a pan with some olive oil, lemon juice and either bits of chorizo sausage or some pesto, put over pasta. All in less preparation time than it takes to boil the pasta.
