The kids and I lifted the onions the other day.  Couldn't think where to dry them, and then noticed my patio greenhouse (one of those plastic jobs) looking empty... now have loads of onions drying out nicely on the wire shelving, sheltered from the rain.  

Result!

I thread the leaves through the shelf mesh and dry them upside down.

I've done half that way and the ones on the bottom rack are sitting the right way up.  I wasn't sure if hanging them upside down was right or not but I'm sure it works!

I'm getting a greenhouse in the autumn (ready for next year) but I'll still keep the patio greenhouse (which has served me well) - it'll earn its keep drying onions  :D

Make sure you don't accidentally cook them if the sun comes out  :lol:

mine were drying wonderfully at the allotment until the rains came in their torrents today!(much welcomed, mind, so I am not too concerned).  So it's back to re-dry again more carefully for me.

Or I may well freeze them as they lose nothing in flavour when frozen.

I froze some onions a couple of yrs ago, even double bagged they made the whole freezer stink of onions. Maybe I should have fried them 1st.

how odd. I did some in plastic bags a couple of years ago with no smell at all (and I only peeled and chopped them, didn't cook them first).

 But last year I used takeaway containers that the local Chinese uses, with no smell - they issue wonderful plastic containers, with tight fitting plastic lids: really useful too for stock, veg and the like. And stack very well in the freezer. I must have a few hundred of them, with lids, in the pantry, accumulated over the last few years. Who needs to splash out on expensive tupperware!!!

Never thought of freezing onions.  I've already  put to one side the ones I don't think will keep well.  Whatever we aren't going to use in the next 2 weeks I think I will chop and freeze.  Have some takeaway plastic containers that sounds like are the right thing for the job.  Cheers  :D
