Raspberries - 0ther than jam

Hello
Have made lots of jam - which is wonderful.  I still have lots of raspberries - which I have frozen and want to know what else I can use them for, as I dont want to throw them away in a few months time.
I was thinking of raspberry couli.  will this keep longer than purely frozen raspberries?
Any ideas really welcome

Have had the same nice problem that you have. What i do with them is to mush them down and freeze them in ice cube trays, then use them out of season as a topping on cereals or porridge etc. They pack well into boxes so do not take up as much space as the whole fruit. :D

How about raspberry muffins (with or without white chocolate! :D )? Easy to freeze and them you can thaw them out as and when...

We like apple and raspberry pie and also use defrosted berries and fresh fruit with yoghurt for brekkie

Raspberry leather.  There was a recipe for it in Grow Your Own this month.  There are others available on the web though.  I tried it and it is supposed to last for 3 months in the fridge.  Mine has already gone!  No more raspberries but will make more next year.

You can look on google for recipes for everything.  Mind you we now have a chef amongst us  :wink:

cook some raspberries with a bit of sugar and then put them in the oven with a sponge mix on top.  Yummy with custard or ice cream.

Raspberry Vinaigrette

2 large handfuls of raspberries
1 small red onion finely chopped
2 tbs mild mustard
200 ml olive oil
4 tbs white wine vinegar
Salt & Pepper

Place the first three ingredients in a food processor,give them a good blast until you have a puree.
Gradually add the olive oil while the processor is still going.
Add the vinegar and give it a quick blast.
Season with salt & pepper.

Keeps for about five days in the fridge.

Enjoy :)

I find we can't keep enough raspberries in the freezer because we mix them with apples for crisps. REALLY nice when they're warm with ice cream on top. Raspberry pie also uses up a lot of berries but SO worth it.
