I have a bumper crop of new potatoes.  Having them with every meal . I have had a really nice recipe which is new potatoes and lentil curry.  Froze a few potions.  Made and froze potato in tomatoe garlic and onions. I have no freezer space left.  I know New potatoes don't store well so I was wondering can you bottle them in salted water.  The other thing is chutney has anyone ever made a nice potatoe chutney.  Any ideas 100 things to do with new potatoes. Thanks

The subject of bottling potatoes has come up before and it is risky at home, as the finished product can carry botulism.  Pressure canning was the only safe option recommended.  I've never heard of a potato preserve so I'm curious to read of any if anyone comes back with an idea.

I have got a couple of good Madhur Jaffrey recipes for new potatoes.   One is pre-boiled cubed potatoes re-fried with spices, the other fried matchstick potatoes with spices.  They are both good if you want me to post them :)

store well in fridge, but next year dig up what you need as you need. I mark planting position, but also do mine under plastic to make rummaging easier.
