Sweet Cecily
« on: August 18, 2011, 09:00 »
Has anyone had any success in preserving Sweet Cecily leaves apart from drying? Receipes say the seeds used in cooking help cut down on sugar requirement, I've found the leaves do ditto when stewing fruit e.g. rhubarb but they die back in winter.

Hi Blueoak,
we do grow SC. but never tried to preserve it.
other than the seeds in sugar for a flavoring when baking.
not sure how you could do it off the top of my head.
would think it might not dry so well ?

I've got some seeds to sow. Could you chop the leaves up & freeze in a drop of water in ice cube trays?

Snowdrop beat me to it.
Forgot all about freezing.
My wife suggest freezing the leaves in layers with clingfilm between them,
Or even wrapping portions in separate sections of clingfilm.

does it still work after it's been frozen, or has the ability to sweeten been lost in the freezing process?
