dehydrating broad beans
« on: July 10, 2013, 23:42 »
How sucessful are dehydrated broad beans, just debating whether to grow loads next year. Are they as good as fresh ones or just suitable for humusy type things and soup which is ok anyway. just thinking they would be a good source of vegetable protein.

I just dry my shelling beans on the plant as long as poss, then leave the pods on trays in the shed till they are dry enough to shell and store in paper bags.
They are just as good as the dry ones you buy in supermarkets - I presume you could treat broad beans in the same way ;)

I tried dehydrating cooked borlotti beans that had been harvested as fresh, rather than dried beans.  They all split and curled up a bit, so made a puree when rehydrated.  They were pretty useful really in soups and for thickening stews  :)

I never thought of drying them, damn it.  I've just shelled the lot!

I dried some of the biggest ones on trays on a very low oven, and they look okay, but I haven't tried them yet as I want to see if they will store well. I'm planning on trying them in a soup in a few weeks time.
