Garlic soup recipe

I've searched the recipes section and the food areas of the forum, but didn't find what I'm looking for and I could trawl the internet for days but there's nothing like asking the opinion of people whose opinion you respect  :).

I'm looking for a good recipe for garlic soup, if anyone has such a thing. Is it as simple as some (say a bulb of) garlic, roasted or (less garlic if) not, with some potato, onion/shallot, stock and seasoning? Or is there something much better out there......?

I make mine along the lines of french onion soup.........

fry very very gently a chopped head of garlic in olive oil, with a chopped onion/couple of shallots. When softened add 2 lts of water and a stock cube, veg or chicken. simmer for a little while, taste and season with salt and pepper. Melta small knob of butter into the soup.
Optional: thicken with a little instant potato for a more filling soup
Meanwhile toast some thick slices of bread...please not sliced white :(....top with grated cheese and grill to melt cheese.
Pour soup into shallow bowls and float the cheesebread on the top.

hi lorna,hows about this one?

              roasted garlic soup with parmesan.

   26 cloves garlic  (unpeeled)
     2 tbsps  olive oil

     2 tbsps  butter
     2 1/4 cups onions
     1 1/2 tsps chopped fresh thyme
    18 clove garlic (peeled)
     3 1/2 cups chicken stock
      1/2 cup whipping cream

    1/2 cup finely grated parmesan
     4 lemon wedges

   preheat oven to 350f place 26 cloves garlic in a small baking dish.add 2 tbsps olive oil and sprinkle with salt&pepper,toss to coat cover dish tightly with foil & bake until garlic is golden brown & tender.
sqeeze garlic between fingertips to release cloves&transfer to a small bowl.

melt butter in a large heavy saucepan over a medium to high heat, add onions and thyme and cook till the onions are translucent,add roasted garlic&18raw cloves &cook for 3 mins add chicken stock,cover and simmer until garlic is tender about 20 mins.

working in batches,puree soup in a blender until smooth return to a saucepan &add the cream and bring to a simmer,season well with salt and black pepper.

devide grated parmesan between 4 bowls and ladle soup over the top sqeeze juice of a lemon wedge in each bowl and serve with crusty bread.

 bon appetite.
i dont suffer with insanity..........i enjoy every minute of it.

Mos and Dave, those both sound lovely! I will have to try both  :D. Don't worry Mos, sliced white bread doesn't see its way out of the shop with me  :).

This is probably a really silly question, but will you be really smelly if you eat garlic soup?  Or is the effect reduced as it is in soup?

I don't think so. I have actually never eaten it, but I understand the smell wouldn't be too strong as the garlic is cooked out.

I may be wrong though, as I still haven't had a chance to try either of these lovely looking recipes  ::). Update when I do though...  :) and I don't care if you do turn garlic monster, I just won't eat it when I need to go that near people who haven't also eaten it  :tongue2:.
