Can someone please give me a recipe for bread pudding? Not bread and butter pudding. My partner from the UK says its the best he remembers from home, crusty on top soft in the middle.
All suggestions welcome.....he goes on and on about it :wink:

Delia Smith has a recipe for old-fashioned bread pudding (as opposed to bread + butter pud, which is a different recipe in her book).
8oz / 225g brown or white bread, cut off crusts
1/2 pt or 275ml milk
2oz / 50g butter, melted
3oz / 75g soft brown sugar (white will do if necessary)
2 level tsp mixed spice
1 egg, beaten
6 oz / 175g mixed fruit - currants, raisins, sultanas, candied peel
grated rind of half an orange
freshly grated nutmeg
Pre-heat oven to gas 4 / 180C / 350F
butter a 2-2.5 pint / 1.25-1.5 litre baking dish
break bread into suitable-sized pieces, place in a bowl
pour over the milk, stir, leave for 30 mins so bread well soaked
add melted butter, sugar, spice, beaten egg
using a fork, beat well so no lumps remain
stir in fruit and rind
spread mixture into baking dish, sprinkle with nutmeg
bake 1 1/4 hours

My Dad made the BEST bread pudding EVER! He didn't use a recipe, so I don't have one, but ingredients similar to above, except more mxd spice and a spoonful of black treacle. The mixture shouldn't be too floppy either, quite thick when you put it in the oven. He mixed it with his hands, said you can't mix these things properly with a fork or spoon!
When I started helping him, I had to have a hand inspection after I'd washed them! fronts, backs, nails!! Only then was I allowed to do anything! I started off by putting the jam in the tarts for him, but was never allowed to tuch the bread pudding!!!! lol
It was sooooo black and fruity and spicy, it was almost like Christmas pudding, not like the rubbbish you get in the shops!!!!
I haven't made any for years!!!!!!

Thanks very much for recipe, partner says it looks exactly like he used to have it and have made a note of the extra spice and treacle.
