cooked caulis

when i cooked my caulis they went pink , although tasty i was hoping for white ones as they were my first
any ideas why they did this?

As you're in hot and sunny Greece, could it have been dust from the soil caught in the florets, which changed the colour on cooking?

I dont think it was the soil as im not so lucky to have that nice red soil , mine is a bit sluggish grey but its improving each year with the ammount of manure we put on it , one day it will look better i hope.
