Over wintering of fruit trees in poly tunnel

 A little bit early to ask but with the new fruit trees in my tunnel will I need to water over winter or leave them go into dormancy they are in large pots sunk in the ground

As they will be dormant over winter I'd just dip my finger down into the pot to make sure the soil is damp enough to ensure their roots have a little bit of moisture to keep them alive.
I work very hard so don't expect me to think as well.
