Fish Pie
« on: September 12, 2011, 20:14 »
I need help from anyone who knows about healthy eating substitutes please.
I have a fish pie recipe which is very tasty, but is 720 calories per serving
It has single cream and soft cheese in it - nice for a special occasion but not weekday supper.
So does anyone know if there is anything I can substitute for the cream and cheese to still keep the creamy taste, or if I should keep it for the special occasions.

Thanks

Elaine

If you cook the fish in semi skimmed milk first then  make a sauce by  thickening the milk with cornflour. It wont come up to the original recipe but it will be  ok if you season it.
Sorry cant think of any way to add cheese without adding calories :)

This is a weightwatchers recipe.  I haven't had a chance to try it myself yet but it is on my to-do list.

ProPoints® Value:    10
Servings:  4
Preparation Time:  30 min
Cooking Time:  25 min
Level of Difficulty:  Moderate

A popular family favourite, ours has a quick and light white sauce - perfect for a midweek meal.

Ingredients

600 g Potatoes, Old, Raw, floury, e.g. Cara, Estima, peeled and cut into large, even-size chunks
 3 tablespoons Milk, Skimmed, hot
 1/4 teaspoons (level) Nutmeg, Ground
 500 ml Milk, Skimmed
3 teaspoons Spread, Very Low Fat
2 tablespoons (level) Flour, Wheat, White, Plain
1 cube(s) Stock Cube, Vegetable, vegetable
1/2 teaspoons (as purchased) Mixed Herbs, Dried
300 g Fish, Cod, Raw, skinned and cubed
300 g Fish, Haddock, Raw, skinned and cubed
125 g Peas, Fresh or Frozen, Thawed if frozen
2 tablespoons Breadcrumbs, Dried, natural coloured
 1 medium Tomato, sliced
 1 pinch Salt
1/4 teaspoons (ground) Pepper, Black (Whole, Cracked or Ground)

Instructions
Boil the potatoes for 12-15 minutes until just tender. Drain and leave to dry in a colander for 5 minutes. Then mash the potatoes until smooth. (Do not use a food processor for this because the potatoes will go gluey.) Mix in the hot milk and nutmeg. Season to taste. Set aside.

Preheat the oven to Gas Mark 5/190°C/375°F. Put the 500 ml (18 fl oz) milk into a saucepan with the low-fat spread and flour. Bring slowly to the boil, whisking frequently until smooth and thickened. Crumble in the stock cube and mix in the herbs. Season to taste.

Drop the fish cubes into the sauce and mix in the peas. Then pour this into a shallow ovenproof pie dish. Spoon over the potatoes in dollops and then smooth them out with a fork so that they are level.

Sprinkle over the breadcrumbs and top with the tomato slices. Bake for 25 minutes or so until the top is golden brown and the sauce is bubbling up under the potato. Allow to stand for 10 minutes before serving.

So use reduced fat cream and cheese instead if that is what does it for you.

Or have it less often or eat a smaller portion.  ;) :)

not sure about the caloric value but this is my sauce I use in my fish pie, it sounds a bit errrrr but when cooked is vary nice.
Make a basic white sauce (slightly thicker than normal), add to this 2tbl spoons of tom ketchup and 1 tin of anchovie thats had a quick blitz to puree.
You get a nice creamy mild fishy flavoured sauce.

Cream and cheese?  don't use any of them in my recipe..

  • Poach a piece of smoked haddock with a piece of unsmoked haddock in milk.
  • Boil and mash potatoes.
  • Flake the haddock (or substitute with cod, pollack, maybe a bit of salmon), picking out the bones and removing the skin.
  • Make a basic white sauce (butter, flour, milk).  You can use 50:50 fresh milk alongside the milk you used to poach the fish, but check how salty the milk is first if you have used smoked fish.
  • Place the fish in a layer on the bottom of a wide oven-proof dish.  Scatter on a few (or a lot) of capers and or thawed frozen prawns to taste.  You could add in peas or sweetcorn if you like.
  • Pour over the white sauce to cover the fish.
  • Layer the mashed potatoes over the fish and sauce.  Smooth over the top, or fluff it with a fork if you like a crunch.
  • Place in a hot oven until the top starts to brown.

Absolutely delicious..

I usually sprinkle some grated Cheddar over the potato before it goes in the oven, but I have made a cheese sauce before now. No cream.  :)
