I just cut the stalk end off to expose the seed and dry the whole chilli in an open topped jar over a radiator or boiler as we do not have an airing cupboard.  Just shake the dried seeds`out  put them in a paper envelope then in a airtight box in the fridge if possible.

What a waste of a chilli!   :D :D

I just save the seeds from a chilli after I've cut it open.  lay the seeds on a piece of kitchen towel until they are really dry then store in a small paper bag.  Hopefully labeled with the correct variety written on it! lol  I have been known to forget which is in what bag!!!   :D

Only the end gets binned , the dried chilli goes in a jar in the spice rack whole, flaked or powdered. :)

Thought that there could be a problem of cross pollination and the seads not running true to variety?

they'll never survive the first frost never mind a whole winter - but you can try and overwinter them indoors.  Then next year they will already have an established root system and flower much earlier and be more prolific and produce more fruits than in the first year  ;)

Apparently you can overwinter indoors.  It works better the second year of planting and you get better crops as previously stated but after the secong year the yield decreases.
