Anyone got a good stuffed marrow recipe please preferably something with rice.

Ooooh, I do love a good stuffing. :wink:

I do a mix of bolognese type mince meat sauce, cheese and rice.
Cheese makes everything better.

Hi Richy,

i made a packet of Batchelors savoury rice up and put it in a marrow and stuck it in the oven. Wasn't too bad, would h ave been better with some cheese on the top

No rice, but thought i would throw mine in

Mix in a bowl chopped shallot, chopped mushroom, chopped tomotoes (your own not from a tin), tom puree, mince and an egg. Add this to a hollowed marrow and bake (covered) at about 180 for about an hour or so, then take the cover off, cover the marrow with cheese sauce, bake for 20 mins more!

Absolutely delicious!!!! I have a marrow in the fridge just waiting to be used again!!!!

i normally parbake before but hollow before i do that.

i find marrow, courgette easy enough to get the middle out of when raw but with aubergines i find it easier to do when cooked.....

i picked up a round courgette/marrow from a local grower yesterday,  it's quite flat so i'll slice the bottom off and use it similar to a pizza base,  then another night do the same with the top (so more of a mounded topping than a stuffing!)  and then use the ring thats left in the middle like normal courgette as a side veg.
