Are there any veggies that dont freeze well?

I have never frozen fresh veg at all and wouldn't  know where to start, but I wondered if any  veg is a no-no for freezing?

Also is it easy to freeze stuff.........?  I shall try and find a discussion about it now

General rules for freezing veg from my personal experiance:
*  blanching matters - even though it is sometimes a pain.  I still remember the horrible bags of cauli florets when I thought it was too much trouble. :oops:  A blanching basket helps but a sieve works well with the right sized pan.
* Cooling fast after blanching.  The wine cooler things that you keep in the freezer - they work for cooling the water without faffing with icecubes!
*  Courgettes dont work.  Even when you have a gut. :( Courgette soup on the other hand is great frozen. :)

And, while they may not be as great as they are straight out the ground, they are still miles better than commercial and ..........

Was going to direct you to there but has already been done! It is very important to blanch. You won't get away with veg and/or fruit with a very high water content, eg cucumber and tomatoes. Having said that, cucumbers can be salted instead or used in soups and we drop tomatoes into boiling water when we have a glut, remove the skin and whiz through a blender and transfer into freezer containers and freeze. They're fine for cooking instead of tins of chopped tomatoes etc.

I usually turn my tomatoes into passata and keep in jars. But that's cos i have more room in cupboard and less room in small freezer.
It's funny that marrow don't freeze very well when pumpkin does though!
