Title: New use for courgettes

Somebody has just told me they made some courgette muffins - weren't very tasty though!

then they didn't add enough spice to the mix  ;)
There are plenty of courgette cake and muffin recipes in the cooking and preserving section for anyone who wants to try!

My mum used to bake courgette and bacon muffins, they were really tasty. :)

I love courgette muffins!  I make loads of them and everyone likes them. It must be a faulty recipe you've got

This is courgette choc chip ones using yellow courgettes  :tongue2:

New to some people i also did a recipe that came free with a seed pack for blueberry and butternut squash cupcakes once but never found it since, they were great too.

Just need someone to invent a runner bean cupcake  :lol:

I made some goodly cupcake muffin things with courgette, smoked bacon and pumpkin seeds which were lush.  Well, I used courgette but I think the recipe called for pumpkin. 

I think sheer dogged determination to use them up makes you more inventive cooking wise and you get some really good eating out of it.  There might be some disappointments along the way, but I think in general the good far outweighs the mediocre. I'm loving the soup with gorgonzola.  Folks just have to believe  :tongue2:
