Mine did nothing and then we had a really wet week and it swelled like mad.  Could it be lack of watering?  Im guessing that since they're near the surface, they may need more watering on non-clay soil, but may be wrong...

water I reckon. I grew boltardy (beeq seeds) from a year before and they were inbetween in the rows of onions. Watered them profusely during the dry spell we had during may/june. The largest one was the size of the swede you get in supermarket. the tiniest one was cricket ball size. sad that we didnt made any dish out of them. Got bored after couple of meals. so either given away or thrown in the bin. Although we had 3-4 flush of leaf harvest and our household likes the leaves rather than the bulb itself.  :)

Things I did
put one cluster every 6 inch.
water regularly (profusely sometimes)
harvest leaves whenever there is enough for a meal

Things I didn't
thinned out the 4-5 plants from cluster. Allowed them to grow and they sorted themselves out. That proved the survival of fittest.

I didn't thin mine out and got loads of small ones but quite a lot of reasonable size ones. :D

Best recipe (sorry know this isnt the recipe section) for me was to simmer until cooked, peal, slive into wedges then into a non-stick pan with a good 3 tablespoons of balsamic, thyme and nob of butter.  Reduce for 3-5 mins.  One of the best things I ate all year, and I dont normally like beetroot!

I planted my beetroot (boltardy) from seed late (July). I thined them out and had what seemed like a good growth, by foliage point. However they are all like marbles. :(

Question: Can I leave them in to grow bigger through winter or have I had it and have to try again next year? Will they go woody if left too long?

Mine did ok this year, still quite a few in the ground, baby beet size.  Are they ok left and harvested when I need them or do I need to lift and store them?

Planted as per the instructions on the packet - thinned out and just watered now and then.
Had a really good crop and still have about 20 left in the ground and all have showed no signs of stopping growing.

Best way to cook is to place in a pyrex dish with a drizzle of veg oil tightly cover with foil and roast for 3 to 4 hours at the lowest setting on my oven. Peel. Eat.

Grew beetroot for the first time this year; the seem to be nicely swelled, and in a container bed too - I did keep up with very regular watering though - had salad leaves in with them, so as soon as they looked like they were wilting I knew it was time to give them plenty of water.   :)
