Title: When do you dig beetroot?

This is my first time for growing any veg,so please forgive me asking any silly questions   :oops:

My beetroot have loads of lovely leaves on them & I can see one poking up through the soil :)

Is this ready to dig up?  Do i cut the leaves or twist them off and can i use them ?

You should be able to pull them up with no trouble and you can kinda see how big they are from the bit that's showing above the ground.  Yes you can use the leaves, in salads or cooked - they taste like beetroot!   :D
