This topic has probably been covered before...... I want to pickle some home grown beetroot.... ive read so many differing methods online and would like to get a definitive answer, as im a born worrier especially regards botulsim!
So, my thinking is this..... boil jars and lids in order to sterilize them. When beetroot is cooked, put slices into warm jars and cover with HOT vinegar, covering all the beetroot. Screw lids on and then place jars into boiling water for 20 minutes to seal...... Does this sound about right??
