Hi All, hope youre keeping well

This topic has probably been covered before...... I want to pickle some home grown beetroot.... ive read so many differing methods online and would like to get a definitive answer, as im a born worrier especially regards botulsim!

So, my thinking is this..... boil jars and lids in order to sterilize them. When beetroot is cooked, put slices into warm jars and cover with HOT vinegar, covering all the beetroot. Screw lids on and then place jars into boiling water for 20 minutes to seal...... Does this sound about right??

Here is what I have done many a time and recently did some.
The beetroot last through to Christmas if done around now.

Heat the oven to 180C
Wash the beetroot, top and tail and place in a dish, Cover dish with foil and cook for 3/4 to 1hour
Allow the beetorot to cool.
Peel off the skins, they fall off easy doing it this way.
Put your vinegar of choice along with spices of your choice and a little salt into a jug and mix well.
Pour over the beetroot.
Put into jars and seal.
let it mature for a few week or so.

I crinkle cut my beetroot into slices.
I use Sarsons pickling vinegar as its the most preferred pickling liquid that we all like. Apart from salt, no more spices need adding.

Thanks Lettice! When you say at the end, seal the jars.... is that literally just tightening the lids on, or does it involve some kind of boiling water bath?

We’ve never bothered with water bathing our pickles, but if it makes you more comfortable then do it.  Good hygiene, and sterilising jars is all we do.

It was more to make sure they are tight, many ways to do it.

I used to use those Kilner jars with that awful 'rusty' clip and rubber seal. Hated them if I'm honest.
But now use Kilner jars with a screw top. They are so easy to use and worked well.
Better still, they fit so much better in the cupboards and our giant fridges.
